History
Codorníu has more than 450 years of history and is therefore one of the oldest wineries in Spain. The first documented reference to Jaume Codorníu's winemaking activity dates back to 1551. The marriage between the heiress Anna Codorníu and the winegrower Miquel Raventós in 1659 laid the foundations of a great saga of winegrowers and the history of cava. In 1872 José Raventós produced cava for the first time in Spain following the Traditional Method and established a completely new industry in the Penedés region. The Codorníu cellars in Sant Sadurní d'Anoia were built on behalf of Manuel Raventós in 1885. The design and construction of the winery is carried out by the architect Josep Puig i Cadafalch, who, with Gaudí, was one of the most outstanding representatives of the great Catalan modernist architectural school.
All the grapes necessary for the production of Codorníu cavas are pressed in the same winery and each grape variety ferments separately. After coupage and tirage, the second fermentation, with between one and four years depending on the cava, takes place inside the cellars. Chosen as the best sparkling winemaker at the 2021 Bacchus Awards, Codorníu's technical director, Bruno Colomer, applies all his passion for the production of Cavas in every phase of the production process.
Finally, different varieties of wine are mixed with rigor and imagination to obtain the cuvée or cupada. The examination and analysis of each of the wines, Macabeo, Xarel·lo, Parellada and Chardonnay, allows to decide the proportion of each one to elaborate the different types of coupage sparkling wines.
Tasting notes
View: Very pale straw yellow color. Fine and elegant bubble.
Nose: On the nose, the fruity aromas typical of traditional varieties, citrus, apple and white flowers predominate.
Palate: In the mouth it is pleasant, fresh and balanced.
