Elaboration

Monasterio de las Viñas is a red wine produced by the Monasterio de las Viñas Winery in San José de Aguarón, in the D.O. Cariñena.

Monasterio de las Viñas is a blend of the Garnacha, Tempranillo, Cariñena and Cavernet Sauvignon varieties, from vineyards between 35 and 45 years old planted in glass.

The harvest is done manually.
The grapes are cold macerated (6ºC) for 96 hours and fermented for 8 days in stainless steel tanks at a controlled temperature of 28ºC.
Once the fermentation has been carried out, the wine is macerated between 15 and 20 days to finish extracting the full potential of the grape.
The aging is carried out separately: Tempranillo and Cariñana in French oak barrels and Grenache in American oak.

Choosing the best barrels, the final mixture is made, bottled and left to rest already bottled for at least 24 months.

Tasting notes

Intense rubi color with tile nuances. Fruity aromas united with the toasted and vanilla tones of the wood. In the mouth balanced, round, suae and with a very good tannic expression.
