Jack Daniel, one of 13 children, was born in 1850. He was raised by a family friend before being hired to work with the Dan Call family at the age of seven. Call, a Lutheran minister, also owned a whiskey distillery on the Louse River.
In the years that followed, Jack learned from Call all he could about making whiskey. Later, in September 1863, with a growing desire to devote his life to saving souls rather than intoxicating them, Call sold the distillery to Jack, who was just 13 years old at the time.
Jack Daniel, like Dan Call, believed in softening fresh whiskey with hard maple charcoal. While this process was widely used, the time and expense it required made it less popular among whiskey makers who wanted to obtain a lower-cost product. But Mr. Jack was convinced it was essential, so he perfected his charcoal softening process in 1866. To the present, this method gives JACK DANIEL'S its incomparable softness and exquisiteness. Anticipating government taxes, Mr. Jack registered his distillery in 1866. He was the first to do so. So it is the oldest registered distillery in the nation.
In 1904, Mr. Jack entered his exquisite Tennessee Old No. 7 whiskey at the World's Fair held in St. Louis, Missouri. Of the 20 whiskies from around the world, only he received the Gold Medal of the World's Fair that credited his product as the best whisky in the world.
Charcoal softening is the process used to make Tennessee whiskey, as JACK DANIEL'S. The process involves very slowly passing the freshly brewed whiskey through large containers completely filled with about 3 meters (10 feet) of saccharine maple charcoal. The process lasts 10 days, and during this time, the whiskey absorbs the essence of the charcoal, which refines the drink and gives it a unique taste and aroma.
Whiskey barrels are made from white oak from America because this wood has the perfect combination of compounds to create the most exquisite whiskey. While the whiskey is aged inside the barrel, the wood contracts and expands (like everything else) according to the climatic changes that occur in its environment. While this is happening, the whiskey enters and leaves the wood and the combination of exposed elements is mixed with the whiskey. The blend gives the whiskey a smoky flavor and amber coloration.
